Goji Berry Smoothie

I start every day with a smoothie for breakfast – with hubby! (BTW, if you don’t have a Vita-Mix blender, I beg you to get one – the best thing that ever happened to my kitchen… um… make that the ONLY thing that ever happened to my kitchen!) My favorite concoction is what I call Goji Berry Beauty (goji berries are Asian berries, rich in antioxidants and vitamins, often called super foods in health-food circles, and every ingredient in this mix is so good for you). This gloss shade looks a lot like the smoothie! Here’s my secret recipe:
- Coconut water (2 cups – they’re full of electrolytes)
- Fresh young coconut meat of 1 coconut (if possible; if not, a handful of shredded coconut will do)
- Handful of dried goji berries (you can get them at a health food store or a Whole Foods type of market)
- Handful of blueberries
- A little cinnamon
- 3 ice cubes
- 1 Tbsp. organic almond butter (for protein)
- I like it super sweet so I put in Stevia or Agave
